Dolcetto is an Italian variety found in the northwest region of Piedmont. Dolcetto ripens extremely early and is vulnerable to fungal diseases. The Dolcetto grape is very high in anthocyanins which produces a deep purple wine that is high in tannins but low in acididity. Wines are usually soft and fruity and should be drunk early. Can have notes of licorice and almonds. Shorter fermentations will help to soften the tannins while not compromising color.
