This strain is ideal for producing West Coast-style American craft beers—bold hop aroma bursting with citrus and tropical fruits. The flavor is balanced with mild ester formation at warmer temperatures, allowing hops, character malts, and flavorings to show through. Thorough attenuation, temperature tolerance, and good flocculation make this an easy strain for brewing.
Styles to try this Spring: American and Double IPAs with additions of grapefruit, mango, kumquat, pineapple, apricot, or strawberries; Kettle Sour IPA with or without fruit
This blend includes a German ale strain with low ester formation and a dry, crisp finish. The Lactobacillus produces moderate acidity levels, and the unique Brettanomyces strain imparts a critical earthy characteristic marking a true Berliner Weisse. The concinnity between the yeast and lactic acid creates a refreshingly tart Berliner Weisse, Gose, or Lambic. When using this bend, expect a slow start to fermentation as the yeast and bacteria in the blend are balanced to allow proper acid production.
Styles to try this Spring: Gose and Berliner Weisse with strawberry & rhubarb, pineapple & mango, mixed berry, or guava
This authentic Kӧlsch strain from one of Germany’s leading brewing schools has a rich flavor profile accentuating a soft malt finish. It has low or no detectable diacetyl production and ferments well at colder temperatures for fast lager type beers. Crisp and delicate, perfect for longer days, and pairs well with traditional German brats.
Styles to try this Spring: Traditional Kӧlsch (one of our favorite styles) and International Amber Lagers to balance out your creative brewing this season
