Eiswien is made when ripe grapes are frozen on the vine and then harvested. Freezing causes concentration of sugars. When the frozen fruit is pressed, the ice crystals remain in the press. Ice wine is the english term for Eiswien. Canada is the worlds leading producer of ice wine.
