Eau de Vie, French for “water of life,” is an unaged brandy that can be made from a wide variety of fruits. Commonly used are orchard fruits including apples, pears, plums, cherries, and blackberries. Grapes may be used, but these spirits are usually considered brandies. Eau de Vie are often colorless, with a mellow but unmistakable aroma and flavor of the fruit.
