Q4: October–December 2026

 

2035-PC American Lager

Species: Saccharomyces pastorianus

Profile: A complex and aromatic strain that can be used for a variety of lager beers. This strain is an excellent choice for Pre-Prohibition Lagers, American Lagers, and Light Lagers.

History: With a historic origin from a famous Minnesota brewery, this yeast made its way to another pioneering brewery out west and was archived with Wyeast in 1987. It was contribute to the Wyeast Culture Collection the following year and made available to all craft brewers.

Recommended Pitch Rate for 5 Gallons:

2 Activators™ for ≤ 1.048-1.065 SG

3 Activators™ for 1.065-1.074 SG

3-4+ Activators™ for 1.074-1.105 SG

2575-PC Kolsch II

Species: Saccharomyces cerevisiae

Profile: This authentic Kolsch strain has a rich flavor profile which accentuates a soft malt finish. It has low or no detectable diacetyl production and will also ferment well at colder temperatures for fast lager type beers.

History: Isolated in 2008 for an Oregon brewer trained in the craft of German brewing, and added to the Wyeast Private Collection in the 2010’s.

Recommended Pitch Rate for 5 Gallons: 

1 Activators™ for ≤ 1.048-1.065 SG *

1-2 Activators™ for 1.065-1.074 SG *

2+ Activators™ for 1.074-1.105 SG *

* we recommend pitching more yeast when fermenting at cooler temperatures
