Q1 Winter Release

In celebration of Wyeast Laboratories’ 39th anniversary, we chose to showcase two yeast strains that came to the Wyeast Culture Collection in our earlier days. These strains also give homebrewers distinct style options to experiment with during the winter months—from West Coast IPA to Pre-Prohibition Lager brewing—with reliable, proven, and easy-to-manage characteristics.

1st Quarter: January – March 2025

 

 

1217-PC West Coast IPA

Species: Saccharomyces cerevisiae

Profile: This strain is ideally suited to the production of West Coast-style American craft beers, especially pale, IPA, red, and specialties. Thorough attenuation, temperature tolerance, and good flocculation make this an easy strain to work with. Flavor is balanced neutral with mild ester formation at warmer temperatures, allowing hops, character malts, and flavorings to show through.

History: A Wyeast pioneer, this isolate has been in Wyeast Culture Collections since 1986.

1 Activatorfor ≤ 1.048-1.056 SG

1-2 Activatorsfor 1.056-1.065 SG

2+ Activatorsfor 1.074-1.105 SG

 

2272-PC North American Lager

Species: Saccharomyces pastorianus

Profile: A traditional culture of North American and Canadian lagers, light pilsners, and adjunct beers. Mildly malty profile, medium ester profile, well balanced. Malty finish.

History: Originally submitted to Wyeast to isolate and maintain in 1994, this strain later became a part of the Wyeast Culture Collections.

Featured Recipe: Pre-Prohibition Lager via Brewer’s Friend. This recipe was created by award-winning homebrewer, Jeff Renner.

Recommended Pitch Rate for 5 Gallons: 

2 Activatorsfor ≤ 1.048-1.065 SG

3 Activatorsfor 1.065-1.074 SG

3-4+ Activatorsfor 1.074-1.105 SG
