Grappa, Marc, and Bagaceira are all types of pomace brandy, made from distilling the skins, pulp, seeds, and stems leftover from winemaking. Good pomace brandies can convey the character of the grape extremely well, as the skin of the grape holds the most aroma and flavors. The end result is an aromatic, neutral spirit with renowned digestif qualities.
