Classic Culture Collection: Featured Strains
With lagers having established an extensive presence in craft, it is fitting to highlight 2124 Bohemian Lager and 2565 Kölsch. These strains continue to be top choices for popular styles such as Cold IPA, Italian Pilsner, and traditional Kölsch styles.
2124 Bohemian Lager
Saccharomyces pastorianus
The most widely used Carlsberg-type yeast in the world. This strain produces a distinct malty profile with some ester character and a crisp finish. Versatile and suitable for many styles, including Cold IPA, Italian Pilsner, lagers, and more.
Beer Styles: Cold IPA, Italian Pilsner, International Dark Lager, Vienna Lager, Helles Bock
Featured Styles:
Cold IPA
This clean and bright bodied lager is a new hit in the brewing world. It delivers India Pale Ale hops intensity while maintaining a malt character that is restrained and ultra-crisp.
Cold IPAs are brewed using lager yeast that is fermented at warmer temperatures to give the light and clean backbone to the beer. The temperature increase helps reduce the sulfur-like notes and gives the focus to the hops.
Italian Pilsner
This style of beer was once made accidently but now brewed all over the world with full intention. It takes a German-style Pilsner and dry hopping it with European hops. It is light in color, clean bodied, and unfiltered. Because of the process, the Italian Pilsner’s aroma is maximized by the brewing technique of adding the dry hops to the beer.
2565 Kölsch
Saccharomyces cerevisiae
A classic, true top-cropping strain from Cologne, Germany. Beers will exhibit some of the fruity character of an ale, with a clean lager-like profile. Ideal for the production of traditional Kölsch styles and pseudo-lagers.
Beer Styles: Kölsch, Altbier, International Amber Lager, Pseudo-lagers
Featured Style: Kölsch
A clean, crisp, delicately balanced beer usually with a very subtle fruit and hop character. Subdues maltiness throughout leads into a pleasantly well-attenuated and refreshing finish. Freshness makes a huge different with this beer, as the delicate character can fade quickly with age. Brilliant clarity is characteristic.
Private Culture Collection: Limited Release
Our Private Collection release features professional favorites to complement our lager theme. 2272-PC North American Lager and 2352-PC Munich Lager II are used to make the country’s favorite lager styles. 2272-PC is the backbone to the American lager, the American Light Lager, and the International Lager. The flavors turn out to be smooth, highly-carbonated, and light-bodied, which makes them easy to drink at a lower ABV. For something more complex, 2352-PC will recreate the quintessential malty German lagers and showcase the elegance of ingredients.
2272-PC North American Lager
Saccharomyces pastorianus
A traditional culture of North American lagers, light pilsners, and adjunct beers. Produces a well-balanced mildly malty profile and medium ester profile, with a malty finish.
Beer Styles: American Lager, International Pale Lager, International Dark Lager
Featured Style: International Dark Lager
A darker and somewhat sweeter version of international pale lager with a little more body and flavor, but equally restrained in bitterness. The low bitterness leaves the malt as the primary flavor element, and the low hop levels provide very little in the way of balance.
2352-PC Munich Lager II
Saccharomyces pastorianus
From a famous brewery in Munich, this strain is a low diacetyl and low sulfur aroma producer. An excellent choice for malt-driven lagers.
Beer Styles: Festbier, Dunkles Bock, Schwarzbier, Doppelbock
Featured Style: Doppelbock
A strong, rich, and very malty German lager that can have both pale and dark variants. The darker versions have more richly-developed, deeper malt flavors, while the paler versions have slightly more hops and dryness.
