Overall Impression:

Vermouth probably originated in Bavaria where wormwood flavored wine was common and called Wermuth. The 16th century saw a more wide spread production and marketing of flavored wines such as vermouth.

Modern vermouth is a fairly broad category but is generally dry and bitter with a mild herbal/wormwood aroma. The base wine used in vermouth production is usually a very neutral and non-descript product purchased on the bulk market.
